Becca's Best Banana Bread!

Ever have an excess of bananas on the verge of going bad? I know we always seem to! Besides eating terrible, mushy bananas, you can make delicious banana bread! I love this stuff! It is super moist and yummy and just all around great! Perfect for breakfast, dessert, or a midday snack. This makes about 2 loafs of bread.

Ingredients:

  • 1 tsp. vanilla extract
  • 3-4 (small) or 2-3 (large) very ripe bananas
  • 1/2 cup melted vegan butter (I use earth balance) or regular butter
  • 1 1/2 cup flour
  • 1/2 cup brown sugar
  • 1/2 cup white sugar 
  • 1 tsp. kosher salt
  • 1 tsp. baking soda
  • 1 large egg
  • 1/2 to a whole bag of dairy free-semi sweet chocolate chips (I use chocolate dream) about 2-3 cups (You can use regular semi-sweet chocolate chips)

 









Directions: 

  • Preheat oven to 325 degrees Fahrenheit 
  • Mash the bananas
  • Mix in butter, sugar, vanilla extract, and eggs to the bananas
  • Add in flour, salt, baking soda, and mix well
  • Add in chocolate
  • Pour into two greased loaf pans filling each one about halfway
  • Bake for an hour or until a knife inserted comes back clean
  • Let cool or eat hot and enjoy!
  • Added note: If you have a bunch of overripe bananas then you can bake a bunch of loaves and freeze them. Just let sit out and thaw before eating!

Amy and Roger's Epic Detour by Morgan Matson will sweep readers off their feet with an adorable story of romance, friendship, and moving forward in life. Amy did not expect for her life to turn out like this. It's the summer before her senior year and her mother is forcing her to move from California to Connecticut. After her father's death, Amy is emotionally unable to drive so she is not looking forward to the road trip required to meet her mother in their new home. Luckily Roger is there to take the wheel. Roger and Amy haven't seen each other since they were children, but they have a long trip to catch up, especially since they have decided to ditch their set route and take a detour. As their trip starts to travel into uncharted territory, so do their feelings, but the trip has to end sometime. This book is so wonderful. As with every Morgan Matson book, the characters are completely three dimensional and have great emotional development. I loved how this book had pictures and a travel scrapbook throughout, it was cute and really added to the story. I really enjoyed how this was more than just a romance novel and how both Amy and Roger have problems they have to overcome. I love the idea of taking a road trip and the idea of a detour even more. Overall this is a really great story and it is perfect for romance lovers and those in need of a sweet story.
